Carrot Apple Turmeric & Ginger Bites

After rebelling against a recipe (I do that a lot) I accidentally invented a delicious snack! As well as being high in fibre and low in sugar, these oaty bites also pack an antioxidant, anti-inflammatory punch. Ginger & Turmeric are both loaded with nutrients and bioactive compounds that have powerful benefits for your body and brain. Happy baking!

Ingredients:

2 cups of GF oats 

1 apple – grated

1 carrot – grated 

1 banana – mashed 

1tsp of mixed spice or cinnamon 

Grated or fresh ginger 

1 tsp turmeric 

1 tbsp coconut oil

1 scoop vanilla protein powder – I use Nuzest 

Optional: 1 tbsp nut butter 

Topping: Walnuts or Mixed Seeds 

Method: Simply mix all the ingredients together in a bowl. Pre-heat the oven to 180. Roll the mixture into bite sized balls and place on a baking tray with parchment. Bake until golden brown. Add toppings whilst still warm so they stick – ENJOY!
