Healthy Light Bircher Muesli

On a sunny morning, it’s lovely to have a refreshing, healthy and cooling brekkie – even better when you’ve made it the night before so it’s literally the quickest thing to take out of your fridge .

I sometimes make this and take it in a jar to the beach or on my early morning walk – it’s a great start to the day. Oats are loaded with vitamins and minerals which are important for energy such as B Vitamins & Magnesium. But unlike other oat based dishes, this bircher is balanced with protein & healthy fats from the added nuts, seeds, yogurt or protein powder. This means you won’t be hungry again an hour later! The brilliant thing about this recipe is that it’s completely naturally sweet – the apples provide amazing sweetness as well as a great source of fibre and quercetin, a powerful antioxidant!  

You can also make this vegan if you like by using nut milk – I tend to use almond but it works with anything you have to hand

 

Ingredients

Makes a batch of 4+ servings

  • 2 apples
  • 1 1/2 cups of oats
  • 2 tbsp mix seeds (flax, sunflower, pumpkin, chia)
  • 1 tbsp of lemon juice or 1 tsp ACV
  • pinch of sea salt
  • 1 tsp cinnamon
  • 1/2 cup chopped nuts
  • 2 cups Almond Milk

Method

In a large container, grate the apples and add the lemon juice. Add the nuts, seeds, oats and cinnamon and combine. Finally add the almond milk, yogurt or water and stir well. Cover with a lid and leave it in the fridge overnight. The next day the oats will have soaked up the milk and natural sweetness from the apples.

Serving ideas: 

Top with pomegranate seeds, berries or sliced banana OR ANYTHING YOU LOVE 💕 

Decant in small jars to take out and about!
