Simple Warm Winter Salad

When you’ve been at work all day and you almost can’t be bothered to cook – the temptation to reach for the takeaway menu is all too easy. But wait… this easy warm winter salad is packed full of delicious veg, balanced with satisfying protein AND is was as quick to make as ordering a deliveroo⁠!

You will need;

– Sweet Potato or Butternut Squash

– Red Onion

– Quinoa

– Kale

– Spinach

– Celery

Top with mixed toasted seeds & My Favourite Tahini Dressing

Method;

Stick on your oven as soon as you get in to heat up (around 200 degrees) Chop up your sweet potato or squash into bitesize chunks – the smaller you chop the quicker it’s going to roast so decide how hungry you are!

Drizzle over some olive oil and sprinkle on paprika, cumin & thyme (or any spices you prefer – spices = antioxidants so use them liberally!) – pop in the oven on a baking tray

Next put the quinoa on –

Here’s the trick for perfectly fluffy quinoa: Use twice as much water as quinoa then cook uncovered until the quinoa has absorbed all the water. The cooking time will vary based on quantity.

Once the water is all absorbed, remove the pot from heat, cover it and let the quinoa steam for 5 minutes. That’s when the quinoa pops open into fluffy quinoa perfection, and that is how to cook quinoa properly.

Next prepare the salad – you can add any veg you like (the more variety the better) but for mine I used spinach, celery and red onion.

Keep checking the sweet potato and when it is almost done pop the kale in the oven (sprinkle on some olive oil & salt first) until it goes crispy! Make the dressing whilst you wait – here’s the recipe

Assemble your salad and sprinkle with seeds (and feta cheese if you eat it) to finish!
